Description
Beignets are classic French-inspired deep-fried pastries known for their pillowy soft texture and generous powdered sugar coating. This recipe recreates the traditional New Orleans-style beignets at home by making a yeast-leavened dough that, once fried to golden perfection, provides a light and fluffy treat perfect for breakfasts, Mardi Gras celebrations, or any indulgent moment.
Ingredients
Wet Ingredients
- 1 cup water
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1/2 cup butter
- 1 egg, beaten
- 1/4 cup warm water (110°F)
Dry Ingredients
- 2 1/4 tsp active dry yeast (1 packet)
- 4 cups all-purpose flour
- 1/2 tsp salt
Other
- Oil for frying (vegetable or canola oil recommended)
- Powdered sugar for dusting
Instructions
- Prepare the milk mixture: In a saucepan, combine 1 cup water, 1/2 cup granulated sugar, 1/2 cup milk, and 1/2 cup butter. Heat gently over medium heat until the butter is completely melted. Remove from heat and allow the mixture to cool slightly to prevent killing the yeast.
- Activate the yeast: In a small bowl, dissolve 2 1/4 teaspoons active dry yeast in 1/4 cup warm water (about 110°F). Let it sit for about 5 minutes until the mixture becomes frothy, indicating that the yeast is active.
- Make the dough: In a large mixing bowl, combine the slightly cooled milk mixture with the beaten egg and the frothy yeast mixture. Gradually add in 4 cups all-purpose flour and 1/2 teaspoon salt, stirring continuously until a soft, sticky dough forms.
- Knead the dough: Turn the dough out onto a lightly floured surface and knead for about 5-7 minutes, or until the dough is smooth and elastic. If the dough is too sticky, add a little extra flour, but keep it soft.
- Let the dough rise: Place the dough in a greased bowl, cover it with a clean kitchen towel or plastic wrap, and let it rise in a warm spot for about 1 to 1.5 hours until it doubles in size.
- Prepare for frying: Once the dough has risen, gently punch it down to release air. Turn it out onto a floured surface and roll it out to about 1/4 inch thickness. Cut the dough into 2-3 inch squares or desired shapes.
- Heat oil: In a deep fryer or heavy deep pan, heat oil to 360°F (182°C). Use enough oil so the beignets can float freely while frying.
- Fry the beignets: Carefully drop a few pieces of dough into the hot oil, being careful not to overcrowd the pan. Fry for about 2-3 minutes per side or until they puff up and turn a beautiful golden brown.
- Drain and dust: Use a slotted spoon to remove the beignets from the oil and drain them on paper towels. Generously dust with powdered sugar while still warm for the classic sweet finish.
- Serve and enjoy: Serve the beignets fresh and warm, ideal for breakfast or a festive Mardi Gras celebration. They pair wonderfully with coffee or hot chocolate.
Notes
- Maintaining the oil temperature is crucial; too hot and the beignets can burn quickly, too cool and they absorb too much oil and become greasy.
- It’s best to dust beignets with powdered sugar just before serving to keep them from getting soggy.
- Leftover beignets are best eaten the same day but can be reheated briefly in a hot oven to restore freshness.
- Use a thermometer to accurately monitor oil temperature for best frying results.
- Beignets can be made a day ahead through the dough step and refrigerated overnight to develop more flavor.
