- Sauté Alliums: Add the diced onion, mashed garlic, and chopped shallots to the hot oil. Stir regularly and sauté for 3 to 4 minutes until the onion becomes translucent and fragrant.
- Add Carrots and Celery: Incorporate the chopped carrots and diced celery into the pot. Continue sautéing for 7 to 10 minutes, stirring frequently to allow the vegetables to soften and the flavors to meld.
- Prepare Beans and Seasonings: Rinse and drain the cannellini beans, then add them to the pot. Include the bay leaves, Italian seasoning, red pepper flakes, sea salt, and ground black pepper along with the vegetable broth. Stir well to combine.

- Discard Bay Leaves: After simmering, remove the lid and use a spoon to fish out and discard the bay leaves from the soup.
