Ingredients

Salmon Burger

  • 1 lb fresh salmon (skin removed, patted dry)
  • 2 tablespoons panko breadcrumbs
  • 1 tablespoon Dijon mustard
  • 1 egg, beaten
  • 1 teaspoon fresh lemon zest
  • Salt and pepper to taste
  • 4 slices smoked gouda cheese
  • 1 tablespoon olive oil

  • 4 pretzel buns

Apple Chutney

  • 2 medium Granny Smith apples, diced
  • 1 small red onion, diced
  • 2 tablespoons apple cider vinegar

Instructions

  1. Make the apple chutney: Combine the diced apples, red onion, apple cider vinegar, brown sugar, and ground cinnamon in a saucepan over medium heat. Stir to combine all ingredients well.
  2. Cook the chutney: Let the mixture simmer for about 10 minutes, stirring occasionally, until the apples are soft and the chutney has a jammy consistency. Remove from heat and let it cool while you prepare the burgers.
  3. Prepare the salmon: Pulse the salmon chunks in a food processor 5-6 times until finely ground but still maintaining some texture for a good bite.
  4. Mix the ingredients: In a bowl, gently combine the ground salmon with panko breadcrumbs, Dijon mustard, beaten egg, lemon zest, salt, and pepper, being careful not to overmix to keep the patties tender.
  5. Form patties: Shape the salmon mixture into 4 even patties, about 3/4-inch thick, pressing firmly so they hold together during cooking.
  6. Cook the patties: Heat olive oil in a skillet over medium-high heat. Add the salmon patties and cook for 4-5 minutes on the first side until golden and crisp.
  7. Flip and finish cooking: Carefully flip the patties and cook for another 3-4 minutes until fully cooked through and slightly firm to the touch.
  8. Melt the cheese: Place a slice of smoked gouda on each patty and transfer the skillet (or place patties on a baking sheet) under the broiler for about 1 minute until the cheese melts and bubbles.
