Ingredients
For the Hamburger Steaks
- 1.3 pounds ground beef
- 4 tbsp breadcrumbs
- 1 yellow onion (grated)
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp heavy cream
- 1 egg
For Cooking
- 1 tbsp olive oil
- 1 tbsp unsalted butter
For the Creamy Dill Sauce
- 1 yellow onion (diced)
- 2 garlic cloves (minced)
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp all-purpose flour
- ½ cup low sodium chicken broth
- 1 cup heavy cream
- 2 tbsp chopped dill (plus more for serving)
Instructions
- Prepping: Grate one yellow onion and place it in a large bowl. Add ground beef, breadcrumbs, salt, black pepper, heavy cream, and an egg. Use your hands to gently mix the ingredients until just combined, being careful not to overwork the meat.
- Forming Patties: Divide the mixture into 4 equal portions. Shape each portion into a ball and then press down with your palm or a spatula to create patties about ¾ inch (2 cm) thick. Set the patties aside.
- Chopping Ingredients for Sauce: Finely chop the second yellow onion, mince the garlic cloves, and chop the fresh dill. These will be used in the sauce.
- Searing the Patties: Heat olive oil and butter together in a large nonstick skillet over medium heat. When hot, add the hamburger steaks and sear them for 4-5 minutes on each side until they develop a golden brown crust. Remove the patties and place them on a clean plate.
- Cooking the Aromatics: In the same skillet, reduce the heat to low and add the diced onion and minced garlic. Cook until fragrant, approximately 2 minutes.
- Making the Sauce Base: Add salt, pepper, and all-purpose flour to the skillet, stirring constantly to incorporate the flour and cook out its raw taste.
- Deglazing and Simmering: Pour in the low sodium chicken broth, scraping the brown bits from the bottom of the pan with a wooden spoon. Simmer for 2 minutes to thicken slightly.
- Adding Cream and Dill: Stir in the heavy cream and chopped dill. Bring the sauce to a gentle boil, then reduce heat and simmer for 1-2 minutes until it thickens.
- Finishing the Dish: Return the hamburger steaks to the skillet with the sauce. Simmer them for an additional 5-6 minutes until fully cooked through and heated evenly. Garnish with extra chopped dill and a sprinkle of freshly grated black pepper before serving.
