Ingredients

Sushi Rice Base

  • 2 cups Uncooked sushi rice
  • 1 tsp Konbu dashi powder (or 5cm Kelp piece)
  • 1/2 cup Rice vinegar
  • 1.5 tbsp Sugar
  • 1 tsp Salt

Toppings and Garnishes

  • 1 slice Smoked salmon (thinly sliced)
  • 1 Egg (fried flat and sliced into rounds)
  • 1/4 small Cucumber (thinly sliced)
  • 1 small Radish (thinly sliced)
  • 1 tsp Fish roe (for toppings)
  • Nori sheets (cut for Jack-O-Lantern faces)
  • Mayonnaise (for drawing cat face details)
  • Soy sauce, mayo, and wasabi (optional, for serving)


Instructions

  1. Cook the sushi rice: Rinse the rice and add it to your rice cooker or pot. Before adding water, mix in 1 tsp konbu dashi powder or a 5cm piece of kelp over the rice. Cook the rice following your rice cooker’s instructions or on the stovetop until fully cooked.
  2. Prepare sushi vinegar: In a small pot over medium heat, combine 1/2 cup rice vinegar, 1.5 tbsp sugar, and 1 tsp salt. Heat until the sugar dissolves completely. Set this mixture aside to cool.
  3. Make Jack-O-Lantern faces: Using a 6.5cm diameter cookie cutter, cut out 2 round nori sheets to create the cat face base for decoration.
  4. Prepare fried egg rounds: Crack the egg into a frying pan and fry it flat. Let it cool, then cut out 2 rounds with the same 6.5cm cookie cutter.
  5. Slice vegetables: Thinly slice the radish and cucumber, setting them aside for topping sushi balls.
  6. Season the rice: Once the rice has finished cooking, transfer it to a large bowl and pour the prepared sushi vinegar over it. Mix gently to evenly flavor the rice. Allow the rice to cool slightly to handle safely.
  7. Shape sushi balls: Place a piece of cling wrap on your hand or a clean surface. Put your chosen topping (e.g., smoked salmon, egg round, cucumber, or radish) in the center of the cling wrap. Add about 1/3 cup of sushi rice on top of the topping, then gather the cling wrap around the rice and gently squeeze and shape into a compact ball.
  8. Repeat for variety: Continue shaping sushi balls with various toppings to create a colorful assortment.
  9. Plate sushi balls: Remove cling wrap carefully from each ball and place on a serving plate.
  10. Decorate faces: Using chopsticks or tweezers, arrange the pre-cut nori pieces to form the Jack-O-Lantern’s cat face on the egg and other sushi balls.
  11. Add facial details: Pipe mayonnaise over the sushi balls to draw cat face details, enhancing the festive look.
  12. Finish toppings: Garnish the radish and cucumber sushi balls with fish roe to add color and flavor.
  13. Serve: Present the sushi balls with soy sauce, extra mayonnaise, and wasabi on the side for dipping and additional flavor.

  • Using cling wrap to shape sushi balls helps keep them compact and neat.
