Ingredients

Eyeball Gelatin Mixture

  • 2 cans unsweetened coconut milk (approximately 13.5 oz each)
  • 2/3 cup water
  • 1/2 cup white sugar
  • 2 tsp agar agar powder

Food Coloring

  • Red gel food coloring (pea-sized amount)
  • Blue gel food coloring (pea-sized amount)
  • Green gel food coloring (pea-sized amount)


Instructions

  1. Prepare Food Coloring Mixture: Place a pea-sized amount of red, green, and blue gel food coloring into the bottom of a small, heat-safe mixing bowl. Set this bowl aside for later use.
  2. Combine Main Ingredients: In a medium saucepan, pour the coconut milk and water together until the total liquid equals 4 cups. Add 2 teaspoons of agar agar powder and whisk the mixture until the agar agar is fully incorporated into the liquid.
  3. Heat the Mixture: Place the saucepan over medium-high heat and bring the mixture to a gentle boil. Once boiling, reduce the heat to simmer.
  4. Add Sugar: Stir in 1/2 cup white sugar until fully dissolved. Taste the mixture and add additional sugar by tablespoons if a sweeter taste is desired, stirring until dissolved each time. Then remove the pan from heat.
  5. Create Colored Base: Remove approximately 3/8 cup (1/4 + 1/8 cup) of the agar agar mixture and add it to the bowl with the gel food coloring. Whisk this until the mixture turns black.
  6. Form the Iris Layer: Spoon 1 tablespoon of the black-colored mixture into the bottom of each of six spherical molds placed on a cookie sheet for easy handling. Refrigerate the molds until the black layer sets, about 15 to 30 minutes.
  7. Fill the Molds: Check that the black layer has set. Reheat the remaining agar agar/coconut mixture if it has started to solidify, then pour evenly over the black layer in each mold, leaving a little space at the top.
  8. Seal and Chill: Place the lids on each mold carefully and press down gently to seal. Return the molds to the refrigerator.
  9. Set Completely: Allow the eyeballs to chill for several hours (approximately 4 to 5 hours) until fully set and firm to the touch.
  10. Make More Eyeballs (Optional): If desired, repeat the process with any remaining mixture to create additional eyeballs.
  11. Serve: Carefully remove the eyeballs from the molds and serve chilled as a unique Halloween treat.

Notes

  • If the agar agar mixture thickens before pouring the second layer, gently reheat it until liquid again to make pouring easier.
  • The black coloration is achieved by mixing red, blue, and green gel food coloring to create a realistic deep black iris.
  • Use spherical molds for best eyeball shape; silicone molds are easiest for removal.
