Ingredients

For the Crust

  • 30 Oreo cookies
  • 4 tablespoons unsalted butter, melted

For the Cheesecake Filling

  • 3 (8 oz) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 3 tablespoons sour cream
  • 1 1/2 teaspoons vanilla extract
  • 3 tablespoons all-purpose flour
  • 3 large eggs
  • Orange, purple, and green gel colors

For the Whipped Cream Topping

  • 2 cups heavy cream
  • 1 cup powdered sugar
  • 48 candy eyes


Instructions

  1. Preheat and Prepare Pan: Preheat the oven to 325°F (163°C) and spray a 9×13-inch pan with nonstick baking spray. Set aside.
  2. Make Crust: Crush the Oreo cookies, including the filling, in a food processor until fine crumbs form. Stir in the melted butter until combined, then press the mixture evenly into the bottom of the prepared pan. Bake the crust for 10 minutes, then remove and allow it to cool completely.
  3. Prepare Water Bath: Place a large rimmed baking sheet on the bottom rack of the oven and fill it halfway with water. This water bath will help the cheesecake bake evenly and prevent cracking.
  4. Mix Cheesecake Batter: In a mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy. Add sour cream, vanilla extract, and flour, then beat again until fully combined.
  5. Add Eggs: Add the eggs one at a time to the batter, mixing each until incorporated. Be careful not to overmix to avoid incorporating too much air.
  6. Color the Batter: Divide the cheesecake batter evenly into three separate bowls. Add orange, purple, and green gel food colors to each bowl to tint the batter as desired.
  7. Layer and Swirl: Spoon the colored batter evenly over the cooled crust, alternating the colors. Use a butter knife to gently swirl the colors for a marbled effect, taking care not to over-swirl.
  8. Bake Cheesecake: Place the cheesecake pan on the oven rack above the rimmed sheet pan with water and bake for 45 minutes at 325°F (163°C).
  9. Cool and Chill: Remove the cheesecake from the oven and allow it to cool on a wire rack for 1 hour. Then refrigerate it for 4 to 6 hours or ideally overnight until fully set.

  11. Make Whipped Cream: Pour the heavy cream and powdered sugar into the chilled bowl. Beat on high speed until the cream is light, fluffy, and holds soft peaks.
  12. Decorate and Serve: Use a piping bag fitted with a 1A icing tip to pipe swirls of whipped cream on top of each cheesecake square. Press two candy eyes into each whipped cream swirl to create a fun Halloween look right before serving.
