- 1 Idaho® russet potato, scrubbed and pricked with a fork
- Cooking spray
- Sea salt, to taste
Toppings
- 1/4 cup pasta sauce (tomato basil recommended)
- 1/4 cup shredded mozzarella cheese
- Pizza toppings such as sliced olives, pepperoni, diced peppers, sliced mushrooms (amounts to your preference)
Instructions
- Preheat the Oven: Set your oven to 400°F (204°C) and line a baking sheet with aluminum foil to prevent sticking and ease cleanup.
- Bake the Potatoes: Place the scrubbed and fork-pricked potatoes directly on the lined baking sheet. Bake for 40 minutes or until the potatoes are tender when pierced with a fork. Remove from the oven and allow to cool enough to handle.
- Prepare Potato Skins: Cut each potato in half lengthwise. Carefully scoop out the potato flesh, leaving about 1/4 inch of potato on the skin to maintain structure. Reserve the scooped potato for another recipe if desired.
- Crisp the Skins: Spray the skin sides with cooking spray and place them skin-side down on the baking sheet. Bake for an additional 10 minutes or until the skins are slightly golden and crispy.
- Add Sauce and Toppings: Flip the skins skin-side up and spoon a generous amount of pasta sauce into each skin. Sprinkle with shredded mozzarella and arrange your chosen pizza toppings evenly on top.
- Final Bake: Return the baking sheet to the oven and bake for an additional 10 minutes or until the cheese is fully melted and bubbly. Remove from the oven and serve warm.
