Ingredients
Egg Mixture
- 5 medium eggs
- 1/4 tsp salt
- 1/8 tsp black or white pepper
- 1 green onion, chopped
- 2 tbsp carrot, chopped or grated
Cooking Oil
- 1 tsp neutral oil (such as vegetable or canola oil)
Instructions
- Whisk Eggs: In a bowl, whisk the eggs thoroughly together with salt and pepper until well combined and slightly frothy.
- Add Vegetables: Incorporate the chopped green onions and carrots into the egg mixture, and whisk again to evenly distribute the ingredients.
- Preheat Pan and Add Egg: Heat a 10-inch non-stick pan over low heat and add the neutral oil, tilting to coat the surface evenly. Pour in about one-third of the egg mixture, spreading it evenly in the pan.
- Start Rolling: As the egg begins to set but is still slightly runny on top, gently lift the edges with a rice paddle or spatula and start rolling the omelette from one edge to the other.
- Add More Egg Mixture: When you reach the last roll, pull the omelette to the opposite side of the pan, then pour in another one-third of the egg mixture into the pan’s empty space.
- Fill Gaps: Tilt the pan gently at both ends of the omelette to let the uncooked egg fill in the tapered ends and any gaps due to the pan’s shape.
- Continue Rolling: Roll the omelette again and pull it back towards the opposite side. Pour the remaining one-third of the egg mixture and repeat the rolling and filling process.
- Seal the Omelette: Try to avoid ending the roll on the short sides of the pan. If it happens, hold the omelette firmly with a spatula and your hand to seal it properly.
- Rest and Slice: Remove the omelette from heat and let it rest on a cool surface for a few minutes. Slice it into 6 to 8 pieces, trimming any tapered ends if desired.
- Serve or Store: Serve immediately or allow it to cool completely before storing for later enjoyment.
Notes
- Use a non-stick pan for best rolling results and easier cleanup.
- Keep the heat low to cook the eggs gently and prevent browning.
- You can customize the vegetables by adding finely chopped bell peppers, spinach, or mushrooms.
- Gyeran Mari tastes great warm or cold, making it a perfect lunchbox addition.
- Ensure the layers are thin enough to roll smoothly without breaking.
