Ingredients
For the Stroganoff
- 1 tablespoon olive oil
- 1 tablespoon butter
- 8 ounces cremini mushrooms, sliced
- 1/2 medium onion, chopped
- 1 pound lean ground beef
- 3 cloves garlic, minced
- 2 tablespoons flour
- 1 tablespoon Worcestershire sauce (or more, to taste)
- 1 tablespoon Dijon mustard (or more, to taste)
- 1 cup beef broth
- 1/2 cup full-fat sour cream
- Salt & pepper, to taste
Instructions
- Sauté Mushrooms and Onions: Heat olive oil and butter in a skillet over medium-high heat. Once hot, add sliced mushrooms and chopped onions. Sauté, stirring occasionally, for 7-10 minutes until the mushrooms release their water and it evaporates, and they develop a nice sear. Remove mushrooms and onions from the skillet and set aside.
- Brown the Ground Beef: Add the ground beef to the same skillet and cook for about 8 minutes, breaking it up with a spoon as it browns. Stir in the minced garlic once the beef begins cooking. If there is excess fat, spoon most of it out once the beef is fully browned.
- Add Flour: Sprinkle the flour over the browned beef and stir it in well. Cook for approximately one minute, stirring occasionally to avoid lumps.
- Incorporate Flavorings and Broth: Stir in Worcestershire sauce, Dijon mustard, and beef broth. Cook for another 1-2 minutes, stirring until the flour and mustard have dissolved and the mixture is heated through. Scrape up any flavorful bits from the bottom of the pan while stirring.
- Return Mushrooms and Onions: Add the sautéed mushrooms and onions back into the skillet and stir to combine thoroughly with the beef mixture.
- Finish with Sour Cream: Remove the pan from heat and stir in the sour cream until fully incorporated. Season with salt and pepper to taste. Serve immediately over buttered egg noodles, mashed potatoes, or rice for a classic Stroganoff experience.
Notes
- For a lower-fat version, use reduced-fat sour cream or Greek yogurt instead of full-fat sour cream.
- If you prefer a thicker sauce, add an extra tablespoon of flour when cooking the beef.
- Feel free to adjust the amount of Worcestershire sauce and Dijon mustard to suit your taste preferences.
