Ingredients

Chicken

  • 4 chicken breasts
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 4 slices mozzarella
  • 4 slices tomato
  • 2 tablespoons basil, sliced

Balsamic Reduction

  • 1/2 cup balsamic vinegar
  • 2 tablespoons light brown sugar


Instructions

  1. Preheat and season: Preheat your grill to medium-high heat. Season the chicken breasts evenly on both sides with Italian seasoning, garlic powder, onion powder, salt, and pepper to bring out great flavor.
  2. Grill chicken: Spray the grill with non-stick cooking spray to prevent sticking. Place the chicken breasts on the grill and cook until they are almost fully cooked through, about 12 minutes, flipping once.
  3. Add mozzarella and melt: Place a slice of mozzarella on each chicken breast. Close the grill lid and cook for a few more minutes until the cheese melts beautifully over the chicken.
  4. Prepare balsamic reduction: Meanwhile, combine the balsamic vinegar and light brown sugar in a small saucepan. Simmer over medium heat for about 10 minutes, stirring occasionally, until the sauce is reduced by half and has a syrupy consistency. Keep warm.
  5. Assemble and serve: Remove the chicken from the grill. Top each breast with a slice of tomato and sprinkle with sliced basil. Drizzle generously with the warm balsamic reduction. Serve immediately and enjoy the fresh, vibrant flavors.
