- 7 slices multigrain bread (from the bakery section)
- Fat free cooking spray
- 1 garlic clove, for rubbing on toast

Instructions
- Caramelize the Onions: Heat 1 tablespoon of olive oil in a pot over medium heat. Add the thinly sliced onion and season with salt and black pepper. Stir frequently as you cook until the onions turn a deep brown color and are fully caramelized, approximately 15-20 minutes.
- Preheat the Oven: While the onions caramelize, preheat your oven to 350°F (175°C) to prepare for toasting the bread.
- Prepare the Bread: Lay 7 slices of multigrain bread on a baking sheet. Spray both sides of each slice with fat free cooking spray to help them crisp up nicely in the oven.
- Bake the Bread: Place the baking sheet in the preheated oven and bake the bread slices for 10 minutes. Then flip each slice and bake for an additional 5 minutes until golden and toasted.
- Infuse Toast with Garlic: Remove the toasted bread from the oven and immediately rub a garlic clove across the surface of each slice to impart a subtle garlic flavor.
- Toast the Pine Nuts: In a small pan over medium heat, toast the pine nuts, stirring frequently, until they become fragrant and slightly golden, releasing their nutty aroma.
- Assemble the Toasts: Spread about 1 tablespoon of goat cheese evenly onto each slice of toast. Top each with roughly 2 tablespoons of the caramelized onions, then sprinkle a heaping 1/2 teaspoon of toasted pine nuts on top. Finish with a pinch of salt and black pepper to taste.
