  • One (24-count) package refrigerated chocolate chip cookie dough

Frosting

  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • 3 large egg yolks
  • 1/2 cup (1 stick) butter, cubed
  • 1 tsp vanilla extract
  • 1/2 cup chopped pecans
  • 1 cup shredded or flaked sweetened coconut

Topping

  • Additional pecan halves (24, one for each cookie cup)

Instructions

  1. Preheat and Prepare Cookie Cups: Preheat the oven to 350°F (175°C). Generously grease a 24-cavity miniature muffin pan with cooking spray to prevent sticking. Place one cookie dough ball into each muffin cavity. Bake for 10-15 minutes or until the centers are set and edges turn golden brown. Once baked, cool for about 10 minutes, then gently press the center of each cookie cup with the handle of a wooden spoon to create small indentations. Allow the cookie cups to cool completely.
  2. Make the Frosting: In a medium saucepan over medium heat, combine evaporated milk, granulated sugar, egg yolks, cubed butter, and vanilla extract. Stir constantly as the butter melts and bring the mixture to a gentle boil. Continue stirring for 10-12 minutes, or until the mixture thickens to a luscious custard consistency. Remove from heat and stir in chopped pecans and shredded sweetened coconut. Let the frosting cool for about 30 minutes to thicken further.
  3. Assemble the Cookie Cups: Using a cookie dough scoop or spoon, fill each cooled cookie cup with a heaping tablespoon of the coconut-pecan frosting.
