  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped

For the Steak

  • 1 – 1¼ lb sirloin steak, cut into 1 inch cubes
  • Salt and pepper to taste
  • ½ tablespoon olive oil (to be added during cooking)
  • 1 tablespoon butter (to be added during cooking)


Instructions

  1. Heat the skillet and melt butter with olive oil: Warm a large skillet over medium heat. Add 1 tablespoon butter and ½ tablespoon olive oil, allowing the butter to melt fully to create a flavorful cooking base for the potatoes.
  2. Cook potatoes with garlic and herbs: Add the cubed potatoes, minced garlic, chopped parsley, thyme, rosemary, and red pepper flakes to the melted butter and oil mixture. Cook for 5-6 minutes, stirring occasionally, until the potatoes are tender yet firm. Season with salt and pepper to taste.
  3. Remove potatoes: Transfer the cooked potatoes onto a plate to keep warm and free up the skillet for steak preparation.
  4. Prepare skillet for steak searing: Discard any burnt garlic and herbs from the skillet. Increase heat to high until the skillet starts to smoke lightly. Add the remaining ½ tablespoon olive oil and 1 tablespoon butter, allowing the butter to melt and coat the skillet evenly.
  5. Sear the steak bites: Place the sirloin steak cubes into the hot skillet without moving them for about 1 minute to develop a rich, brown sear.
