Description

A vibrant and refreshing fruit salad featuring strawberries, pineapple, mandarin oranges, kiwis, and blueberries tossed in a zesty honey-lime poppy seed dressing. Perfect for a light snack or a healthy dessert, this recipe is easy to prepare and bursting with fresh flavors.

Ingredients

Fruits

  • 1 lb. strawberries, sliced or diced
  • 1 lb. fresh pineapple, diced
  • 3 mandarin oranges, peeled, segmented & cut in half
  • 4 kiwis, peeled & diced
  • 1–1½ cups blueberries (about 12 ounces)

Dressing

  • 3 limes, juiced
  • 3 tsp honey
  • ½ tsp poppy seeds

Instructions

  1. Make the dressing: Whisk together the freshly squeezed lime juice, honey, and poppy seeds in a small bowl until well combined. Set the dressing aside to let the flavors meld.
  2. Assemble the salad: In a large mixing bowl, combine the sliced strawberries, diced pineapple, mandarin orange segments, peeled and diced kiwis, and blueberries. Gently toss the fruits to mix them evenly.
  3. Add the dressing and serve: If serving immediately, pour your desired amount of the honey-lime poppy seed dressing over the fruit and toss gently until all fruit pieces are coated evenly. If preparing in advance, cover the bowl and refrigerate for at least 1 hour, then toss with the dressing just before serving to maintain freshness and texture.

Notes

  • You can adjust the amount of honey based on your preferred sweetness level.
  • Chilling the fruit salad before serving enhances the flavors and texture.
  • Use fresh, ripe fruits for the best taste and sweetness.
  • This salad can be doubled easily to serve larger groups.
  • For a nutty twist, garnish with toasted sliced almonds or walnuts before serving.
