- 4 tablespoons olive oil, divided use
- 2 tablespoons ghee or butter
- 2 1/2 large, white onions, halved and sliced
- Salt, to taste

- 4 cloves garlic, pressed through garlic press
- 1 teaspoon herbes de Provence
- 1 teaspoon dried thyme
- 1/4 cup sherry (or white wine)
- 1 1/2 tablespoons flour
- 2 1/4 cups beef stock
- 2 teaspoons fresh thyme leaves
Instructions
- Prep Ingredients: Gather and prepare all meatball ingredients as listed to be organized and ready for assembly.
- Soak Breadcrumbs: Place breadcrumbs into a dish and add the milk to soak for 5 minutes. Simultaneously, place ground beef in a large bowl.
- Mix Meatball Ingredients: After soaking, add the milk-soaked breadcrumbs to the beef along with parsley, thyme, herbes de Provence, salt, pepper, minced onion, garlic, 1/4 cup Gruyere cheese, and whisked egg. Mix gently by hand until evenly combined but do not overmix to keep meatballs tender.
- Form Meatballs: Scoop 2 tablespoon-size portions of the mixture using a cookie scoop or spoon onto a tray. Wet hands slightly and roll each into a round meatball. Refrigerate for 15 minutes to chill and firm up.

- Make Sauce Base: Sprinkle flour over onions, stirring to incorporate for 30 seconds. Slowly whisk in beef stock until smooth. Allow sauce to simmer for about 5 minutes to thicken slightly.
- Prepare for Broiling: Turn broiler on high. Turn off stove heat under sauce and stir in fresh thyme leaves. Nestle browned meatballs back into skillet and top with remaining Gruyere and shredded mozzarella cheeses.
