Onion Sauce
- 2 large yellow onions, sliced thinly
- 5 tablespoons unsalted butter, divided
- 1/2 cup dry white wine
- 3 garlic cloves, minced
- 1 tablespoon Worcestershire sauce
- 1 teaspoon balsamic vinegar
- 1 teaspoon dried oregano
- ½ teaspoon paprika
- ¼ teaspoon dried thyme
- ¼ teaspoon dried sage
- 2 tablespoons all-purpose flour
- 1-2 cups low-sodium beef broth
Topping
- 1 cup grated Gruyere cheese
- 4 sprigs of fresh thyme (optional)
Instructions
- Heat the oil and season the chicken. In a sauté pan over medium heat, add 1 tablespoon of avocado oil and let it heat up for 2-3 minutes. Meanwhile, season the chicken breasts on both sides with 1 teaspoon black pepper, ½ teaspoon kosher salt, and 1 teaspoon garlic powder.
- Cook the chicken. Place the chicken in the hot pan and cook for 4 minutes on one side, then flip and cook an additional 4-7 minutes until the chicken is cooked through, with juices running clear or an internal temperature of 165°F. Transfer the chicken to a plate and set aside.
- Caramelize the onions. To the same pan, add 3 tablespoons of butter, thinly sliced onions, 1 teaspoon black pepper, and ½ teaspoon kosher salt. Stir and deglaze the pan by scraping up any browned bits. Cook the onions over medium-low heat, stirring frequently, for 12-18 minutes until they caramelize to a golden brown. Cooking for 12 minutes will yield slightly firmer, more acidic onions, while longer cooking softens and mellows their flavor.
- Add wine and garlic. Stir in ½ cup dry white wine and minced garlic, cooking for 2 minutes to blend flavors and reduce the wine slightly.
- Mix in seasonings. Add Worcestershire sauce, balsamic vinegar, dried oregano, paprika, dried thyme, and dried sage to the pan. Stir until well combined.
- Create the roux. Add 2 tablespoons butter and 2 tablespoons all-purpose flour to the pan. Stir continuously for 3 minutes to cook out the raw flour taste and start thickening the sauce.
- Add beef broth and thicken sauce. Gradually add 1 cup of low-sodium beef broth, stirring constantly until the sauce thickens to your liking. Add additional broth in 1/8 cup increments if a thinner sauce is desired. Taste and adjust seasoning with salt and pepper as needed.
- Return chicken to pan and coat. Place the cooked chicken breasts back into the sauté pan. Spoon the rich onion sauce over the chicken, ensuring it is well covered.
- Add cheese and melt. Sprinkle 1 cup grated Gruyere cheese evenly atop the chicken and sauce. Turn off the heat and cover the pan with a lid. Let it sit for a few minutes until the cheese melts thoroughly.
- Garnish and serve. Garnish with fresh thyme sprigs, if desired, and serve warm with your choice of sides.
