Ingredients
Cheesecake Mixture
- 8 oz Cream Cheese, softened
- 1/2 cup Granulated Sugar (or sugar alternative)
- 1 tsp Vanilla Extract (preferably pure)
- 8 oz Whipped Topping (non-dairy optional)
- 1 cup Graham Cracker Crumbs (or gluten-free crumbs)
Blackberry Compote
- 2 cups Blackberries (fresh or frozen)
- 1 tbsp Lemon Juice (fresh preferred)
- 1/2 cup Granulated Sugar (usually combined with main sugar but double-checked)
Coating & Decoration
- 1 cup Dark Chocolate Melting Wafers (or milk/white chocolate)
- 1 tbsp Edible Glitter (optional decoration)
- 1/2 cup Crushed Graham Crackers or Nuts (for topping)
- Lollipop sticks (quantity based on 12 servings)
Instructions
- Make Blackberry Compote: In a medium saucepan over medium heat, combine blackberries, granulated sugar, and lemon juice. Stir continuously until the mixture thickens, which takes about 8 to 10 minutes. Remove from heat and let cool completely before use.
- Prepare Cheesecake Base: In a large bowl, beat the softened cream cheese with sugar for 3 to 5 minutes until smooth and creamy. Gently fold in the vanilla extract and whipped topping until evenly combined.
- Combine Ingredients: Add graham cracker crumbs and half of the cooled blackberry compote to the cheesecake mixture. Mix carefully until just incorporated to maintain texture.
- Form Pops: Scoop small portions of the cheesecake mixture and roll them into balls with your hands. Insert a lollipop stick into each ball and place them on a tray. Freeze the pops for at least 1 hour to firm up.
- Melt Chocolate: In a microwave-safe bowl, melt the dark chocolate melting wafers in short bursts, stirring between intervals until smooth.
- Coat Pops: Dip each frozen cheesecake pop into the melted chocolate, ensuring an even coating. Immediately sprinkle with optional edible glitter and crushed graham crackers or nuts for added texture.
- Set Chocolate: Return the coated pops to the freezer for 10 to 15 minutes to allow the chocolate to set completely.
- Serve and Garnish: Arrange the cheesecake pops on a serving platter. Optionally, drizzle with the remaining blackberry compote for an extra fruity touch.
Notes
- Use non-dairy whipped topping to make the dessert dairy-free.
- Substitute graham cracker crumbs with gluten-free versions for a gluten-free treat.
- Edible glitter is optional but adds a magical sparkle perfect for themed parties.
- Freeze the pops thoroughly before dipping to prevent melting of the chocolate coating.
- Store pops in the freezer and consume within 3-4 days for optimal freshness.
- Use fresh blackberries when available for best flavor; frozen blackberries work well too.
