Description

This vegan fondant poire chocolat is a luscious chocolate and pear cake that combines rich melted dark chocolate with the fruity sweetness of fresh pears. Made with dairy-free ingredients like margarine and soy yogurt, this dessert offers a moist, tender crumb enriched with almond powder and subtly sweetened with sugar. Perfect for a cozy gathering or special occasion, it bakes to a decadent finish that pairs beautifully with the natural softness of pears.

Ingredients

Chocolate Base

  • 160 g dark baking chocolate (chocolat à pâtisser noir)
  • 125 g margarine
  • 120 g granulated sugar
  • 90 g almond powder
  • 50 g all-purpose flour
  • 1/2 teaspoon salt
  • 200 g soy yogurt

Fruit

  • 3 small pears, quartered

Instructions

  1. Melt Chocolate and Margarine: Gently melt together the dark baking chocolate and margarine in a heatproof bowl over simmering water (double boiler) or carefully in the microwave until smooth and combined.
  2. Combine Dry Ingredients: Stir in the granulated sugar, almond powder, and flour into the melted chocolate and margarine mixture until fully incorporated.
  3. Add Wet Ingredients: Once the dry ingredients are well mixed, add the soy yogurt and salt. Mix thoroughly to create a smooth, homogenous batter.
  4. Prepare for Baking: Pour the batter into a 20 cm diameter cake pan or pastry ring. Arrange the pear quarters evenly on top, pressing them lightly into the batter.
  5. Bake: Preheat the oven to 170°C (338°F). Place the pan in the oven and bake for 30 minutes until the cake is set but still tender inside.

Notes

  • The recipe uses all-purpose flour; for a gluten-free option, consider substituting with gluten-free flour blends.
  • The sugar amount can be adjusted to taste or substituted with alternative sweeteners suitable for vegan baking.
  • Ensure pears are ripe but firm to maintain shape during baking.
  • Use a cake pan or pastry ring of approximately 20 cm diameter for best results.
  • Allow the fondant to cool slightly before serving to enhance texture and flavor.
