Ingredients
Vegetables
- 1 pound asparagus, trimmed and cut into bite-sized pieces
- 2 medium zucchinis, sliced
- 2 yellow squashes, sliced
- 6 button mushrooms, cleaned and halved
- 3 cloves of garlic, minced
Herbs and Seasonings
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons dried parsley
- 2 tablespoons olive oil
Instructions
- Prepare the Vegetables: Wash all the vegetables thoroughly. Trim the asparagus and cut into 2-inch pieces. Slice the zucchinis and yellow squashes evenly. Clean and halve the mushrooms. Mince the garlic cloves.
- Heat the Pan and Oil: Place a large skillet over medium heat and add 2 tablespoons of olive oil. Allow the oil to warm but not smoke.
- Sauté Garlic and Vegetables: Add the minced garlic to the pan and sauté for about 1 minute until fragrant. Then add the asparagus, zucchinis, yellow squashes, and mushrooms to the skillet. Stir to coat the vegetables with the oil and garlic.
- Add Herbs and Cook: Sprinkle the fresh rosemary and dried parsley evenly over the vegetables. Continue to cook over medium heat, stirring occasionally, for about 10-15 minutes or until the vegetables are tender yet crisp.
- Season and Serve: Taste and season with salt and pepper as desired. Remove from heat and transfer to a serving dish. Serve warm as a side dish to your favorite entrees.
