Description

This Fig and Goat Cheese Tart is a delightful savory-sweet pastry that brings together caramelized onions, fig jam, fresh figs, and tangy goat cheese on a flaky puff pastry crust. Topped with lemon slices, fresh rosemary, and a drizzle of honey, this elegant tart is perfect as an appetizer or a light meal, showcasing the harmonious blend of flavors and textures.

Ingredients

For the Caramelized Onions

  • 30 grams unsalted butter (2 tablespoons)
  • 300 grams onions, peeled and sliced into thin rings (2 medium onions)

For the Tart

  • 1 sheet puff pastry, thawed according to package directions if frozen
  • 90 grams fig jam or preserves (1/4 cup)
  • 3-4 fresh figs, washed and thinly sliced
  • 100 grams crumbled goat cheese (about 3 1/2 ounces)
  • 1/2 lemon, very thinly sliced
  • 2 teaspoons fresh rosemary, finely chopped
  • Salt and pepper, to taste
  • 1 egg, lightly beaten
  • 20 grams honey (1 tablespoon)

Instructions

  1. Prepare Caramelized Onions: Melt the unsalted butter in a large saucepan over low heat. Add the sliced onions, tossing occasionally with a spatula to prevent sticking or burning. Cook gently for about 1 hour until onions become soft, golden brown, and sweetly caramelized.
  2. Preheat Oven and Prepare Baking Tray: Preheat your oven to 400°F (205°C). Line a half-sheet rimmed baking tray with parchment paper to ensure the tart does not stick during baking.
  3. Prepare Puff Pastry Base: Unroll the thawed puff pastry sheet onto a silicone baking mat. Using a dinner plate or similar as a guide, cut a circle approximately 10 inches (25 cm) in diameter. If desired, keep pastry scraps for making puff pastry twists later.
  4. Assemble the Tart: Transfer the puff pastry circle to the prepared baking tray. Spread the fig jam evenly over the surface of the pastry using a rubber spatula or small palette knife, leaving a 1-inch border around the edges to allow for crust folding.
  5. Add Toppings: Evenly layer the caramelized onions over the fig jam. Scatter the crumbled goat cheese over the onions, then arrange the thinly sliced fresh figs on top. Finally, add the thin lemon slices over the figs, seasoning with salt and pepper as desired.
  6. Prepare the Pastry Crust: Using a pastry brush, lightly brush the beaten egg along the 1-inch pastry border. Carefully turn up the edges to create a rim, and brush the exposed pastry again with egg wash to enhance browning.
  7. Bake the Tart: Place the assembled tart in the preheated oven and bake for 25-30 minutes until the puff pastry is flaky, fully risen, and deeply golden brown.
  8. Finish and Serve: Remove the tart from the oven and immediately drizzle with honey. Sprinkle the finely chopped fresh rosemary on top for an aromatic finish. Slice into wedges and serve hot for best flavor and texture.
  9. Storage and Reheating: Wrap any leftovers tightly in foil and store in the refrigerator for up to two days. To reheat, place the tart in a 350°F (175°C) oven for about 10 minutes or until warmed through. Alternatively, enjoy it cold.

Notes

  • Be patient with the caramelized onions; slow cooking brings out their natural sweetness, essential for balancing the tart flavors.
  • Fresh figs are seasonal but provide the best flavor; dried figs can be used as a substitute but alter the texture.
  • Use chilled puff pastry to ensure maximum flakiness upon baking.
  • The lemon slices add a subtle acidity and brightness that complements the richness of the goat cheese and sweetness of the figs.
  • Brush the pastry edges thoroughly with egg wash to achieve that beautiful golden crust.
  • Leftover tart is delicious cold or reheated gently to restore flakiness.
