Description

These Epic Beef Nachos Supreme are loaded with flavorful seasoned ground beef, refried beans, melted cheddar and Monterey Jack cheeses, fresh veggies, and optional avocado. Perfectly crispy tortilla chips are baked to golden edges, making this a satisfying and shareable appetizer or meal, better than any fast food nachos.


Ingredients

Beef Mixture

  • 1 teaspoon olive oil
  • 1 small yellow onion, diced
  • 1 red pepper, diced
  • 1 pound extra lean ground beef
  • 3 tablespoons homemade or store-bought taco seasoning
  • 1 cup frozen corn kernels
  • 3/4 cup water

Toppings and Base

  • 1 bag (350 grams) tortilla chips
  • 1 can (14 oz) refried beans (or homemade)
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 3 Roma tomatoes, diced
  • 2-3 green onions, sliced
  • 1 avocado, diced (optional)
  • Handful of cilantro, chopped


Instructions

  1. Preheat Oven: Preheat the oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper or foil to prevent sticking and make cleanup easier.
  2. Sauté Vegetables: Heat 1 teaspoon olive oil in a large skillet over medium heat. Add diced onion and red pepper and cook for about 4 to 5 minutes until they become soft and fragrant.
  3. Cook Ground Beef: Add the ground beef to the skillet and cook, stirring occasionally, until no longer pink, approximately 6 minutes. Drain any excess fat from the skillet.
  4. Simmer with Seasoning: Stir in the frozen corn kernels and taco seasoning. Add 3/4 cup of water and bring to a simmer. Reduce the heat and continue simmering until most of the liquid evaporates, about 5 minutes.
  5. Prepare Chips: While the beef mixture simmers, spread tortilla chips in a single layer on a large baking sheet.
  6. Add Refried Beans: Using a spoon, place small dollops of refried beans evenly over the tortilla chips. There’s no need to spread them flat, as they will soften and spread during baking.
  7. Assemble Nachos: Evenly distribute the cooked ground beef mixture over the chips and dollops of beans, then sprinkle shredded cheddar and Monterey Jack cheeses evenly on top.
  8. Bake Nachos: Place the baking sheet in the preheated oven and bake for 15 minutes or until the cheese is melted and bubbly, and chips are lightly browned on the edges and crispy.
  9. Add Fresh Toppings and Serve: Remove nachos from the oven and immediately top with diced tomatoes, sliced green onions, diced avocado if using, and chopped cilantro. Serve promptly and enjoy.
