Description

This Easy Vegan Chili Cheese Dip is a creamy, flavorful plant-based dip perfect for game days, parties, or any snack time. Made with soaked cashews, bell pepper, almond milk, and seasoned with chili powder, nutritional yeast, and homemade taco seasoning, it provides a cheesy, spicy kick without any dairy. Black beans and fresh salsa add texture and zest, making this dip delicious served with chips or fresh veggies.

Ingredients

Main Ingredients

  • 1 1/2 cups cashews, soaked for at least an hour, then drained
  • 1 orange bell pepper, chopped roughly
  • 1 cup almond milk or similar unsweetened non-dairy milk
  • 2 teaspoons chili powder
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon salt
  • 2 tablespoons homemade taco seasoning
  • 2 cans (15 oz each) of black beans, rinsed and drained
  • 12 oz fresh salsa (or pico de gallo; jarred salsa is an option if needed)

Instructions

  1. Soak Cashews: Begin by soaking 1 1/2 cups of raw cashews in water for at least one hour to soften them. This step helps achieve a creamy texture for the dip.
  2. Prepare the Mixture: Drain the soaked cashews and add them to a blender along with the chopped orange bell pepper, 1 cup of unsweetened almond milk, 2 teaspoons chili powder, 1/4 cup nutritional yeast, 1/2 teaspoon salt, and 2 tablespoons homemade taco seasoning. Blend until smooth and creamy.
  3. Add Beans and Salsa: Transfer the blended chili cheese base to a mixing bowl. Gently fold in the rinsed and drained black beans and 12 oz of fresh salsa or pico de gallo, mixing thoroughly to combine the flavors and distribute the texture.
  4. Chill and Serve: Refrigerate the dip for at least 30 minutes to allow the flavors to meld. Serve chilled or at room temperature with tortilla chips, fresh vegetables, or your preferred dipping items.

Notes

  • For a spicier dip, add extra chili powder or a dash of cayenne pepper.
  • Homemade taco seasoning can be substituted with store-bought.
  • Use fresh salsa for the best flavor; however, jarred salsa can be used in a pinch.
  • Soaking cashews overnight will make blending easier and yield a creamier texture.
  • This dip keeps well in the refrigerator for up to 4 days.
