Ingredients
Vegetables & Aromatics
- 1 large yellow onion, diced
- 3 sticks celery, trimmed and sliced thinly
- 2 medium carrots, diced
- 4 cloves garlic, minced
Meat & Protein
- 2 lbs ground beef
- 15 oz canned red kidney beans, drained and rinsed

- 2 tablespoons chili powder
- 2 teaspoons ground paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- ½ teaspoon ground cinnamon

- 2 tablespoons extra virgin olive oil
- 28 oz canned diced tomatoes
- 1 cup broth (beef or vegetable)
Instructions
- Cook the vegetables: Heat the olive oil in a large pot over medium heat. Add the diced onions, sliced celery, and diced carrots. Sauté the vegetables until tender, about 4 to 5 minutes. Then add the minced garlic and cook for an additional minute until fragrant.
- Brown the beef: Add the ground beef to the pot and stir to break it up. Cook until mostly browned, approximately 6 to 7 minutes. Mix in the chili powder, paprika, cumin, oregano, sea salt, and cinnamon. Continue cooking until the beef is browned all over, about 2 to 3 more minutes.
- Simmer: Pour in the canned diced tomatoes, drained kidney beans, and broth. Stir everything together and bring the mixture to a simmer over medium heat. Once simmering, reduce the heat to medium-low.
- Thicken: Let the chili bubble gently, uncovered, for 30 to 45 minutes. Stir occasionally to prevent sticking and to allow the chili to thicken and the flavors to meld. Serve warm over rice or with your favorite toppings.

- You can substitute ground turkey or chicken for ground beef for a leaner version.
