Ingredients

Salmon Patties

  • 14-15 oz canned salmon or salmon in packets (well drained)
  • 1 cup yellow onion (1 medium, finely diced)
  • 1/2 red bell pepper (seeded and diced)
  • 1/2 cup Panko bread crumbs
  • 1 large egg (lightly beaten)
  • 2 Tbsp mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 tsp garlic salt (or substitute 1/2 tsp fine sea salt and 1/4 tsp garlic powder)
  • 1/4 tsp freshly ground black pepper
  • 1/4 cup parsley (finely minced)

For Cooking

  • 2 Tbsp olive oil (divided)
  • 2 Tbsp unsalted butter (divided)


Instructions

  1. Sauté onion and pepper: Heat 1 Tbsp olive oil and 1 Tbsp butter in a medium skillet over medium heat. Add the finely diced onion and red bell pepper and sauté until they are golden and softened, about 7 to 9 minutes. Once done, remove the skillet from the heat.
  2. Mix salmon patties: In a large mixing bowl, combine the well-drained flaked salmon, sautéed onions and peppers, Panko bread crumbs, beaten egg, mayonnaise, Worcestershire sauce, garlic salt, black pepper, and minced parsley. Stir the mixture thoroughly to combine all ingredients evenly. Then, shape the mixture into patties about 2 inches wide and 1/3 to 1/2 inch thick, using a heaping tablespoon of mixture for each patty.
  3. Pan-fry patties: Heat the remaining 1 Tbsp olive oil and 1 Tbsp butter in a clean non-stick pan over medium heat until hot. Add the salmon patties in a single layer and sauté for 3 to 4 minutes per side, or until each side is golden brown and the patties are cooked through. If the patties are browning too quickly, reduce the heat. Remove cooked patties to a plate lined with paper towels to absorb excess oil. Repeat the cooking process with the remaining patties, using the remaining oil and butter.
