Ingredients
Fruit Filling
- 5 peaches (cut into wedges)
- 125 g fresh raspberries
- 75 g caster sugar
Cobbler Topping
- 140 g plain flour
- 1 teaspoon baking powder
- 90 g caster sugar
- 90 g cold butter (salted or unsalted)
- 2 teaspoons milk
- 2 tablespoons flaked almonds
- Zest of 1 lemon
Instructions
- Preheat the Oven: Preheat your oven to 160°C if using a fan oven, or 170°C if you have a conventional oven, ensuring it reaches the correct temperature before baking.
- Prepare the Fruit: Slice the peaches into chunky wedges and place them in a mixing bowl. Add the fresh raspberries and sprinkle with 75 g caster sugar. Toss gently to coat the fruit evenly with sugar. Transfer this fruit mixture into an ovenproof baking dish and set aside.
- Make the Cobbler Topping: In a large bowl, combine the plain flour, baking powder, and 90 g caster sugar. Using your fingers, rub the cold butter into the dry ingredients until the mixture resembles coarse crumbs with small pea-sized pieces of butter remaining. Add the 2 teaspoons of milk and stir until the dough comes together with a soft, cookie dough-like texture.
- Assemble the Cobbler: Spoon the cobbler dough evenly over the fruit in the baking dish, covering as much as possible. Sprinkle the top with flaked almonds and zest of one lemon. Optionally, you may sprinkle some demerara sugar over the top for extra crunch and sweetness.
- Bake: Place the dish in the preheated oven and bake for 25 to 30 minutes, or until the fruit filling is juicy and bubbling around the edges and the cobbler topping has turned golden brown and fluffy.
Notes
- The milk helps bind the cobbler topping dough, but you can substitute with any milk alternative if preferred.
- Using both salted or unsalted butter works well; adjust added salt in the recipe accordingly.
- For extra flavor, serve the cobbler warm with vanilla ice cream or whipped cream.
- Make sure the butter used in the topping is cold to achieve the best crumbly texture.
