  • ¼ cup frozen peas (if not included in the seafood mix)
  • Lemon wedges (optional)

Instructions

  1. Heat the Oil and Sauté Aromatics: Heat a non-stick skillet or large paella pan over medium-high heat and add the olive oil. Once hot, add the minced garlic and chopped onion and cook for about 10 minutes until they become fragrant and softened.
  2. Add Spices: Stir in the turmeric and smoked paprika, mixing well to combine the flavors with the sautéed onion and garlic.
  3. Cook the Rice: Add the long grain or jasmine rice to the pan and stir. Cook the rice until it starts to look translucent around the edges, which takes about 3 minutes.
  4. Add Broth and Seafood: Pour in the fish broth along with the frozen seafood mix and any frozen peas if not already included. Season generously with salt and pepper to taste.
  5. Cook without Stirring: Allow the mixture to cook undisturbed on medium heat until the liquid is fully absorbed and the rice is tender. This should take about 15 minutes. Avoid stirring so the rice can cook evenly and develop a nice texture.
