Ingredients
Fish and Marinade
- 2 Fish fillets
- 6 sprigs Thyme, chopped
- 3 sprigs Rosemary, chopped
- 1 tsp Oregano, dried
- 2 tsp Parsley, chopped or dried
- 4 Garlic cloves, minced or 2 tsp garlic paste
- 1 tsp Basil, chopped (optional)
- 1 tsp Lemon zest
- 1 tbsp Lemon juice
- 1 tbsp Sweet chilli sauce
- ½ tsp Salt
- ½ tsp Black pepper
- ¼ cup Olive oil
Vegetables
- 1 cup Cherry tomatoes
- ½ cup Olives, pitted
- 1 medium Onion, diced
- 1 Zucchini, diced
Instructions
- Preheat the oven: Set your oven to 400℉ (204℃) and lightly grease or line a baking dish to prevent sticking.
- Prepare the marinade: In a bowl, combine all the ingredients except the fish and vegetables, mixing thoroughly to form the flavorful marinade.
- Marinate the fish: Rub the marinade generously on both sides of the fish fillets and set them aside. Reserve about ½ tablespoon of the marinade for later use.
- Coat the vegetables: Add the cherry tomatoes, olives, diced onion, and zucchini to the remaining marinade and stir well until all veggies are evenly coated.
- Arrange in baking dish: Spread the marinated vegetables evenly in the prepared baking dish, then place the marinated fish fillets on top of the veggies.
- Add remaining marinade: Pour the saved marinade over the fish fillets to enhance flavor and keep them moist as they bake.
- Bake the fish and vegetables: Place the baking dish on the middle rack and bake at 400℉ for approximately 15 minutes, depending on the thickness of the fish fillets.
- Check doneness: Cook until the fish flakes easily with a fork or reaches an internal temperature of 145℉ (63℃) as measured with a food thermometer.
- Rest and serve: Remove from the oven and allow the fish to rest for about 5 minutes before serving to let the flavors settle.
Notes
- The baking time may vary depending on the thickness and type of fish used; thinner fillets will cook faster.
- You can substitute sweet chili sauce with a mild hot sauce or honey for different flavor profiles.
- Fresh herbs can be substituted with dried herbs if fresh are unavailable, but reduce quantity slightly as dried herbs are more concentrated.
- Try serving this dish with a side of couscous, rice, or crusty bread to soak up the flavorful juices.
- Using a food thermometer ensures perfectly cooked fish and food safety.
