Description

This Easy Low Carb Chicken Casserole is a nutritious and flavorful dish perfect for a quick weeknight meal. Combining tender chicken breast, crispy bacon, fresh broccoli, spinach, and creamy ranch dressing, it’s topped with melted mozzarella and cheddar cheese for a cheesy, satisfying finish. This low-carb casserole is wholesome, filling, and simple to prepare in just 30 minutes.

Ingredients

Protein

  • 4 cups diced or shredded cooked chicken breast
  • 8 slices cooked and chopped bacon

Vegetables

  • 3 cloves minced garlic
  • 5 cups broccoli florets
  • 1 pound thawed frozen spinach (well-drained)

Dairy & Dressings

  • 1 cup ranch dressing
  • 1 cup shredded mozzarella cheese (separated)
  • 1 cup shredded cheddar cheese (separated)

Instructions

  1. Prepare Ingredients: If not already cooked, shred or dice cooked chicken breast. Cook bacon slices until crispy and chop into pieces. Mince garlic cloves, and ensure frozen spinach is fully thawed and well-drained to remove excess moisture.
  2. Mix Base Ingredients: In a large bowl, combine shredded chicken, chopped bacon, minced garlic, ranch dressing, 1/2 cup shredded mozzarella cheese, 1/2 cup shredded cheddar cheese, broccoli florets, and drained spinach. Stir well to evenly distribute all ingredients.
  3. Assemble Casserole: Transfer the mixture into a greased casserole dish, spreading it evenly. Sprinkle the remaining 1/2 cup shredded mozzarella and 1/2 cup shredded cheddar cheese evenly over the top.
  4. Bake Casserole: Preheat the oven to 350°F (175°C). Bake the casserole uncovered for 20-25 minutes until the cheese is melted, bubbly, and slightly golden on top.
  5. Serve: Remove from oven and let the casserole cool slightly before serving. Enjoy warm as a satisfying low-carb meal.

Notes

  • Use fresh cooked chicken or rotisserie chicken for convenience.
  • Ensure spinach is thoroughly drained to avoid excess moisture making the casserole watery.
  • You can substitute ranch dressing with a homemade or your preferred low-carb dressing.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
