Description

This Easy Cabbage Pie features a deliciously braised cabbage and carrot filling enveloped in flaky puff pastry. A comforting, savory pie perfect as a main dish or side, combining the sweetness of caramelized onions and carrots with tender cabbage and fresh dill, all baked to golden perfection.

Ingredients

Filling

  • 1 small cabbage, shredded
  • 1 carrot, grated
  • 2 onions, diced
  • 2 tablespoons butter
  • 1 tablespoon oil
  • 3 tablespoons water
  • Salt and pepper to taste
  • 3 teaspoons fresh dill, chopped

Pastry

  • 1 package frozen puff pastry
  • Egg wash (1 egg yolk beaten with 1 teaspoon whipping cream)

Instructions

  1. Prepare the Cabbage Filling: Heat butter in a pan and fry the diced onions and grated carrot until they begin to caramelize, about 5 minutes.
  2. Braise the Cabbage: Add the oil and shredded cabbage to the pan. Cover and sauté on low heat for approximately 15 minutes. If the mixture becomes dry, add water as needed to maintain moisture.
  3. Season and Cool: Stir in chopped dill and salt and pepper to taste. Remove from heat and set aside to cool slightly.
  4. Preheat Oven: Preheat your oven to 400°F (200°C).
  5. Prepare Pastry Base: Line the base of a pie pan with one sheet of frozen puff pastry, leaving extra pastry to hang over the edges. Using the pan as a guide, cut a second piece of puff pastry for the pie top and set aside.
  6. Assemble Pie: Fill the lined pie pan with the cooled cabbage mixture. Cover with the second piece of puff pastry, folding over the overhanging edges to seal the pie.
  7. Apply Egg Wash: Brush the top pastry layer with the prepared egg wash to ensure a golden brown finish.
  8. Bake: Place the assembled pie into the preheated oven and bake for about 40 minutes or until the pastry is golden brown and crisp.

Notes

  • Ensure the cabbage mixture is not wet to avoid soggy pastry.
  • You can substitute fresh dill with dried dill, using 1 teaspoon instead of 3 teaspoons.
  • Allow the pie to cool for 10 minutes before slicing to let the filling set.
  • This pie can be served warm or at room temperature.
  • For a vegan version, use vegan puff pastry and substitute butter with a plant-based margarine and egg wash with plant-based milk.
