- Mix eggs and sugar: In a large mixing bowl, beat the 6 large eggs and 1 cup sugar together until the mixture is light, fluffy, and pale in color. This process usually takes about 8 to 10 minutes with a mixer. Then gently fold in 1 teaspoon of vanilla extract by hand.
- Combine dry ingredients: In a separate medium bowl, sift together 1⅓ cups all-purpose flour, ¼ teaspoon salt, 1 teaspoon baking powder, and 1 teaspoon apple pie spice until well blended.
