Description

Delight your Easter celebration with these adorable and delicious Easter Egg Cake Pops. Made from crumbled vanilla cake mixed with cream cheese frosting, these egg-shaped treats are coated in smooth white chocolate and decorated with colorful sprinkles and mini Easter egg decorations. Perfect for parties, gifts, or festive fun, this recipe guides you through easy steps to create cute, bite-sized cake pops that everyone will love.

Ingredients

Cake Pop Base

  • 2 cups vanilla cake crumbs (about 1 small cake, crumbled)
  • 1/2 cup cream cheese frosting (room temperature)
  • 1 tsp vanilla extract

Chocolate Coating & Decoration

  • 2 cups white chocolate chips or candy melts
  • 1-2 tsp vegetable oil (to thin chocolate if needed)
  • Assorted sprinkles (edible glitter, or colored sugar)
  • 20-24 lollipop sticks
  • Mini Easter egg decorations (optional, for extra cuteness)

Instructions

  1. Prepare the Cake Base: Crumble the vanilla cake into fine pieces in a large mixing bowl to ensure there are no large chunks. This will help the cake pops hold together better.
  2. Mix the Base: Add the cream cheese frosting and vanilla extract to the cake crumbs. Start with half the frosting, then gradually add more as needed. Mix well using a spatula or hands until the mixture is sticky but moldable. If it’s too dry, add a little more frosting to achieve the right consistency.
  3. Shape the Cake Pops: Scoop about 2 tablespoons of the mixture and roll it into an oval egg shape. Place each shaped pop on a parchment-lined baking sheet, leaving space between each one.
  4. Insert the Sticks: Insert lollipop sticks halfway into each cake pop and twist slightly to secure them firmly. Chill the pops in the refrigerator for 30 minutes to help them firm up before dipping.
  5. Melt the Chocolate Coating: Place white chocolate chips or candy melts in a microwave-safe bowl. Heat in 20–30 second intervals, stirring in between until the chocolate is smooth and fully melted. If the chocolate is too thick for dipping, add 1–2 teaspoons of vegetable oil and whisk continuously to prevent lumps or burning.
  6. Dip and Decorate: Hold each cake pop by the stick and dip it into the melted chocolate until completely coated. Gently tap off excess chocolate to avoid pooling. Immediately decorate with sprinkles, edible glitter, or Easter-themed decorations before the chocolate sets.
  7. Set and Chill: Place the decorated pops upright in a styrofoam block or cup to keep them standing. Refrigerate for at least 20–30 minutes until the chocolate hardens completely.
  8. Serve and Store: Enjoy your Easter Egg Cake Pops fresh within a day or two. Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Notes

  • Ensure cake crumbs are finely crumbled to help the cake pops bind properly.
  • If the cake mixture is too dry, add frosting gradually until it’s moldable but not sticky.
  • Chilling the shaped cake pops before dipping helps prevent them from falling apart when coated.
  • Use vegetable oil sparingly to thin chocolate for a better dipping consistency.
  • Work quickly when decorating as the chocolate sets fast and sprinkles may not stick if delayed.
  • For a gluten-free version, use gluten-free cake and frosting.
  • Store cake pops in the fridge to maintain freshness, especially in warm climates.
