Ingredients
Chicken and Vegetables
- 3 chicken breasts
- 2 cans tomatoes with green chiles (10 oz each)
- 1 can corn (drained)
- 1 can black beans (15 oz, rinsed and drained)
Seasonings and Broth
- 2 teaspoons minced garlic
- 2 tablespoons taco seasoning
- ¼ cup cilantro (chopped)
- ½ teaspoon black pepper
- 1 teaspoon salt
- 1 cup chicken broth
Instructions
- Prepare the Crockpot: Place the 3 chicken breasts at the bottom of the crockpot to create the base of your dish.
- Add Vegetables and Seasonings: Pour in 2 cans of tomatoes with green chiles over the chicken. Add the drained can of corn and the rinsed and drained black beans on top. Stir in minced garlic and taco seasoning, then sprinkle black pepper and salt evenly. Pour the chicken broth over all the ingredients to help blend the flavors during cooking.
- Cook the Chicken: Cover the crockpot and cook on low heat for 6-8 hours, or on high heat for 3-4 hours, until the chicken is tender and cooked through.
