  • 2 cups mild salsa

Instructions

  1. Prepare chicken: Place the whole boneless, skinless chicken breasts in your crockpot. Pour the 2 cups of mild salsa evenly over each breast, ensuring they are well coated.
  2. Cook: Cover and cook the chicken in the crockpot on low for 4 hours or on high for 1½ to 2 hours. Be careful not to overcook, as the chicken will become too soft and start falling apart.
  3. Preheat oven: About 15 minutes before the crockpot cooking finishes, preheat your oven to 425°F (220°C) to prepare for baking the cheesy topping.
  4. Add cheese: Transfer the cooked chicken breasts to a 9×13 inch baking dish. Spoon some of the leftover salsa from the crockpot over the chicken to keep it moist. Evenly sprinkle about 1/4 cup of shredded Mexican Blend cheese on top of each breast.
  5. Bake: Place the baking dish in the preheated oven and bake for 15 minutes, or until the cheese is melted, bubbly, and golden brown on top.
