Ingredients

Chicken and Fruit

  • 3 pounds chicken, any cut, seasoned with salt & pepper
  • 1 large apple or 2 small apples, diced
  • 1 tablespoon oil (for Instant Pot only)

Sauce

  • 1 cup low-sodium chicken broth
  • 1/2 cup honey
  • 1/3 cup unsweetened applesauce
  • 1 teaspoon salt (or more, to taste)
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon garlic powder


Instructions

  1. Prepare Slow Cooker: If using potatoes, place them at the bottom of the slow cooker. Add the seasoned chicken on top. Evenly spread the diced apples over the chicken.
  2. Make Sauce: In a small bowl, mix together chicken broth, honey, applesauce, salt, cinnamon, cumin, pepper, onion powder, and garlic powder until well blended. Pour this sauce evenly over the chicken and apples in the slow cooker.
  3. Cook in Slow Cooker: Cover and cook on HIGH for 2-3 hours or on LOW for 4-6 hours until the chicken is tender and falling apart.
  4. Prepare Instant Pot: Select the sauté setting on the Instant Pot and heat the oil. If using skin-on chicken, add the pieces and sear them for a few minutes on each side until browned. Remove the chicken once seared. Skip this step for skinless chicken.
  5. Deglaze Instant Pot: In a bowl, combine the sauce ingredients as above. Pour the sauce into the pot and scrape the bottom with a wooden spoon to loosen any browned bits.
  6. Cook in Instant Pot: Return the chicken to the pot. Add the diced apples (and optional potatoes if using) on top. Secure the lid, seal the valve, and set to high pressure for 12 minutes.
  7. Release Pressure: Once cooking is complete, perform a quick pressure release. Open the lid carefully and serve the chicken with the tender apples and sauce.

Notes

  • This recipe works well with any cut of chicken including thighs, breasts, or a mix.
  • Adding potatoes is optional but makes the dish heartier.
  • Adjust salt according to your taste and dietary needs.
  • For skinless chicken in the Instant Pot, searing is optional and can be skipped.
  • Serve with rice, quinoa, or crusty bread to soak up the sauce.
