Ingredients
Soup Base
- 2 tablespoons olive oil (extra virgin, optional)
- 1 large onion (peeled)
- 2 large carrots (peeled and sliced or chopped)
- 2 stalks celery (optional, chopped)
- 1½ pounds chicken breasts (with skin and bones, 2 or 3 breasts)
- 2 tablespoons Vegeta (or 2 tsp chicken base, or 1 chicken bouillon cube)
- 1 teaspoon salt (or to taste)
- ½ teaspoon pepper (or to taste)
- 8 cups water
- 2 bay leaves
- ½ teaspoon rosemary (dried, optional)
Noodles and Garnish
- 4 ounces egg noodles (wide dry, about 2 cups)
- ¼ cup parsley (fresh, chopped for garnish)
Instructions
- Start the soup. Prepare your crockpot by adding the olive oil, peeled onion, sliced carrots, chicken breasts with skin and bones, chopped celery (if using), Vegeta seasoning, salt, pepper, water, bay leaves, and dried rosemary into the pot.
- Cook the ingredients. Set the crockpot to low and cook for 8 hours or choose the high setting to cook for 4 hours. This slow cooking allows the flavors to develop and the chicken to become tender.
- Shred the chicken. Once cooking is complete, carefully remove the onion and take out the chicken breasts. Remove the skin and bones, then shred the chicken finely using two forks.
- Add noodles to the soup. Return the shredded chicken to the crockpot. Add the wide egg noodles to the soup and stir gently to combine.
- Cook noodles. Set the crockpot to high and cook the soup with noodles for an additional 1 hour, or until the noodles are fully cooked and tender.
- Garnish and serve. Once the noodles are done, remove the bay leaves, stir the soup, garnish with freshly chopped parsley, and serve hot.
Notes
- Using chicken breasts with skin and bones adds extra flavor, but boneless, skinless chicken can be substituted.
- Vegeta seasoning can be replaced with chicken bouillon or chicken base if preferred.
