  • 2 cups beef broth

  • 1 tbsp cornstarch
  • 1 tbsp cold water

Instructions

  1. Season the Short Ribs: Generously season the bone-in beef short ribs with salt and pepper on all sides to enhance the flavor before searing.
  2. Sear the Meat: Heat 2 tablespoons of olive oil in a large skillet over medium-high heat until hot. Add the short ribs and sear each side for about 1 minute until browned to lock in juices.
  3. Transfer to Crockpot: Place the seared short ribs into your Crockpot or slow cooker. Add the sliced onions, minced garlic, and baby carrots arranged around the meat.
  4. Add Liquids and Herbs: Pour in 2 cups of dry red wine and 2 cups of beef broth. Stir in 2 tablespoons of tomato paste, 1/2 teaspoon of dried thyme, 1/2 teaspoon of dried parsley, and add 1 bay leaf for depth of flavor. Cover the Crockpot.
  5. Slow Cook: Cook on low for 6 to 8 hours, or until the meat is tender and falling off the bone.
  6. Prepare Cornstarch Slurry: About 1 hour before the cooking time ends, whisk together 1 tablespoon of cornstarch with 1 tablespoon of cold water until smooth and lump-free.
