Ingredients

Chicken

  • 1 ½ lbs boneless, skinless chicken breasts

Vegetables

  • ½ lb fresh green beans, trimmed
  • 1 lb petite red potatoes, quartered

Marinade & Seasoning

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • 3 tsp garlic, minced
  • ½ tsp ground black pepper
  • ½ tsp salt
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • ½ tsp paprika


Instructions

  1. Arrange Ingredients in Crockpot: Place the boneless, skinless chicken breasts in the center of the Crockpot. Arrange the trimmed green beans and quartered petite red potatoes evenly on both sides of the chicken.
  2. Prepare Marinade: In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, ground black pepper, salt, onion powder, Italian seasoning, and paprika until well combined.
  3. Pour Marinade Over Ingredients: Evenly pour the marinade mixture over the chicken, green beans, and potatoes inside the Crockpot ensuring everything is coated.
  4. Cook: Cover the Crockpot with its lid and cook on high for 2½ to 3½ hours or on low for 5 to 6 hours until the chicken is cooked through and the vegetables are tender.
