Instructions
- Season and Prepare: Season the chicken breasts with salt and pepper to taste. Place the diced onion and chicken breasts in the slow cooker. Pour in the reduced sodium chicken broth and condensed cream of chicken soup. Sprinkle the black pepper and dried thyme over the top.
- Initial Cooking: Cook on high for 3 hours or until the onions are tender and the chicken is cooked through, reaching an internal temperature of 165°F (74°C).
- Shred Chicken and Add Ingredients: Remove the chicken breasts carefully from the slow cooker and shred them with two forks. Return the shredded chicken to the slow cooker along with the frozen mixed vegetables and frozen egg noodles.
- Cook Noodles and Vegetables: Cook for an additional 60 to 90 minutes or until the noodles are tender and cooked through. Stir the mixture after about 30 minutes of cooking to prevent sticking. Avoid overcooking the noodles to maintain the right texture.
