Description

These Crispy Sourdough Cheesy Breadsticks are a delightful snack made from sourdough discard, shredded cheese, and simple seasonings. Baked to golden perfection, these breadsticks are crispy on the outside with a cheesy, flavorful bite. Perfect as an appetizer or alongside soups and salads, they’re easy to customize with your favorite herbs and toppings.

Ingredients

Dough Ingredients

  • 1 cup sourdough discard (See substitution notes below.)
  • 1 cup all-purpose flour (Can substitute with 1:1 whole wheat pastry flour.)
  • 1 cup shredded cheese (Use cheddar, mozzarella, or a mix.)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup olive oil or melted butter (Use olive oil for dairy-free.)

Toppings (Optional)

  • Herbs to taste (rosemary, thyme, or parsley)
  • Additional cheese to taste
  • Sesame seeds to taste
  • Everything bagel seasoning to taste
  • Red pepper flakes to taste

Instructions

  1. Preparation: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or a silicone mat to prevent sticking and ensure easy cleanup.
  2. Mix Dry Ingredients: In a large bowl, combine the sourdough discard, all-purpose flour, shredded cheese, garlic powder, salt, and black pepper. Stir until all the ingredients are evenly distributed throughout the mixture.
  3. Add Fat: Pour in the olive oil or melted butter and stir the mixture until a cohesive dough forms. The dough should be slightly tacky but manageable and not overly sticky.
  4. Roll Dough: Lightly flour your work surface. Roll the dough out to your preferred thickness, whether thin and crispy or a bit thicker for a chewier texture.
  5. Cut Shapes: Cut the rolled dough into strips or fun shapes, depending on your preference. Arrange the pieces evenly spaced on the prepared baking sheet.
  6. Add Toppings: Sprinkle on any extra toppings such as herbs, additional cheese, sesame seeds, everything bagel seasoning, or red pepper flakes. For extra browning, brush the tops lightly with melted butter.
  7. Bake: Place the baking sheet in the preheated oven and bake for 15 to 20 minutes. Bake until the breadsticks turn golden brown and the cheese becomes bubbly around the edges. Rotate the pan halfway through baking for even coloring.
  8. Cool and Serve: Remove the breadsticks from the oven and allow them to cool slightly on a rack. This helps them crisp up perfectly. Serve warm for the best texture and flavor experience.

Notes

  • You can substitute all-purpose flour with whole wheat pastry flour for a healthier alternative.
  • Use olive oil instead of butter to keep the recipe dairy-free.
  • Feel free to customize toppings with your favorite herbs, spices, and seeds.
  • Sourdough discard refers to the leftover starter from feeding your sourdough; if unavailable, try using a similar quantity of yogurt or buttermilk for a tangy twist.
  • Store leftover breadsticks in an airtight container and reheat in the oven for crispness.
