Polenta

For Frying Polenta Bites

  • 2 tablespoons olive oil (divided)

Sautéed Mushroom Topping

  • 2 cups mixed wild mushrooms (chopped; such as cremini, shiitake, and oyster)

  • 1 tablespoon olive oil
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh thyme leaves
  • 1/4 cup dry sherry or Marsala wine
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

  • Grated Pecorino Romano cheese, for garnish

Instructions

  1. Prepare the Polenta: Bring the vegetable broth to a boil in a medium saucepan. Gradually whisk in the polenta, stirring continuously to prevent lumps.

  3. Season the Polenta: Stir in the grated Pecorino Romano, 1 tablespoon of unsalted butter, salt, and black pepper to enhance the flavor and creaminess.
  4. Chill the Polenta: Pour the cooked polenta into a parchment-lined baking dish and spread it evenly. Allow it to cool to room temperature before refrigerating for 1-2 hours until it firms up.
  5. Cut the Polenta Bites: Once firm, remove the polenta from the dish and cut it into 1-inch squares suitable for frying.
