Description

Crispy Dill Pickle Parmesan Chicken is a flavorful and juicy dish where tender chicken breasts are marinated in tangy dill pickle juice, then coated in a seasoned Parmesan breadcrumb crust and pan-fried to golden perfection. This recipe delivers a unique twist on classic fried chicken with a tangy and savory crunch, perfect for a satisfying dinner.

Ingredients

Chicken and Marinade

  • 4 boneless, skinless chicken breasts
  • 1 cup dill pickle juice (from a jar of pickles)

Coating

  • 1 cup seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, whisked
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste

For Frying

  • Cooking oil, for frying (such as vegetable or canola oil)

Instructions

  1. Marinate the chicken: Place the chicken breasts in a shallow dish or a zip-top plastic bag and pour the dill pickle juice over them. Ensure the chicken is fully submerged and refrigerate for at least 30 minutes, up to 2 hours. This step infuses the chicken with a tangy flavor and helps tenderize it.
  2. Prepare the coating stations: Set up three shallow dishes for coating the chicken: one with the flour mixed with garlic powder, onion powder, paprika, salt, and pepper; the second with the whisked eggs; and the third with a mixture of seasoned breadcrumbs and grated Parmesan cheese. This setup allows for an even, crispy crust.
  3. Coat the chicken: Remove the chicken breasts from the pickle brine and pat them dry with paper towels to ensure the coating sticks well. Dredge each piece first in the seasoned flour mixture, then dip into the whisked eggs, and finally press into the breadcrumb-Parmesan mixture until fully coated.
  4. Fry the chicken: Heat about 1/2 inch of cooking oil in a large skillet over medium-high heat. Once the oil is hot, carefully add the coated chicken breasts. Fry each side for 5 to 7 minutes until the crust is golden brown and the chicken reaches an internal temperature of 165°F (74°C) to ensure it is cooked through.
  5. Drain and rest: Transfer the fried chicken to a wire rack to drain any excess oil, which keeps the crust crispy. Let the chicken rest for a few minutes before serving hot to allow juices to redistribute.

Notes

  • For best results, do not skip drying the chicken after marinating; wet chicken will cause the coating to fall off.
  • You can adjust the spices in the flour mixture to your taste for more or less heat or flavor.
  • Use a thermometer to check the internal temperature for perfectly cooked chicken every time.
  • If you want a healthier version, try baking instead of frying, but the crispiness will vary.
  • Serve with a side of ranch or your favorite dipping sauce to complement the pickle flavor.
