- 1 cup chopped spinach, broccoli florets, or sliced mushrooms (optional)
Seasonings and Oil
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat the Oven: Set your oven to 375°F (190°C) to prepare for baking the casserole.
- Sauté Cauliflower Rice: Heat olive oil in a skillet over medium heat and sauté the cauliflower rice for 5 to 7 minutes until tender and most moisture has evaporated.
- Mix Ingredients: In a large bowl, combine the shredded chicken, sautéed cauliflower rice, softened cream cheese, half of the shredded cheddar cheese, garlic powder, onion powder, paprika, salt, and black pepper. Stir until well incorporated.
- Add Cooked Vegetables: If using, fold in the chopped spinach, broccoli florets, or sliced mushrooms to the mixture.
- Prepare Baking Dish: Grease a 9×13-inch baking dish and spread the casserole mixture evenly into the dish.
- Top and Bake: Sprinkle the remaining shredded cheddar cheese on top and bake the casserole uncovered for 20 to 25 minutes, or until bubbly and cheese is melted.
Notes
- You can substitute cream cheese with Greek yogurt for a lighter option.
- Use any cooked vegetables you prefer or omit them if desired.
- Sautéing the cauliflower rice helps remove excess moisture, preventing a soggy casserole.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
