Description

This Crack Corn Salad is a delightful blend of creamy and crunchy textures, featuring sweet corn combined with crispy bacon, sharp cheddar cheese, and a tangy ranch-spiced dressing. Perfect as a refreshing side dish or party salad, it offers a burst of smoky, spicy, and savory flavors in every bite.

Ingredients

Corn Base Options

  • 32 oz frozen sweet corn, thawed and patted dry OR
  • 32 oz canned sweet corn, drained OR
  • 32 oz fresh corn kernels, charred

Salad Mix

  • 10 strips thick-cut bacon, fried and crumbled
  • 2 cups sharp cheddar cheese, freshly shredded
  • 1 cup heavy mayonnaise
  • 0.5 cup sour cream
  • 1 packet (28g) dry ranch seasoning mix
  • 1 medium red bell pepper, finely diced
  • 1 bunch green onions, thinly sliced
  • 1 large jalapeño, deseeded and minced
  • 1 tsp smoked paprika

Instructions

  1. Prepare the corn base: Choose your preferred corn option. For frozen corn, thaw completely and pat dry on paper towels for about 10 minutes to remove moisture, preserving a crisp texture. For canned corn, drain thoroughly for 5 minutes to achieve a softer, sweeter texture. For fresh corn, char the kernels over heat for about 45 minutes to impart a smoky flavor and chewy texture.
  2. Mix dressing: In a large stainless steel mixing bowl, whisk together the mayonnaise, sour cream, dry ranch seasoning mix, and smoked paprika until the mixture forms a smooth, rich emulsion.
  3. Combine ingredients: Gently fold the prepared corn, diced red bell pepper, sliced green onions, minced jalapeño, and shredded sharp cheddar cheese into the dressing using a silicone spatula, ensuring even coating without breaking the corn.
  4. Chill and marinate: Cover the salad and refrigerate for at least 30 minutes to allow the sour cream’s lactic acid to tenderize the corn and let the flavors meld. Note that total prep time varies depending on the corn preparation method chosen.
  5. Add bacon: Just before serving, fold in the crumbled crispy bacon to maintain its crunchy texture and contrast with the creamy salad.

Notes

  • For best texture, remove as much surface moisture as possible from thawed frozen corn.
  • Char fresh corn kernels over high heat for authentic smoky flavor, but it requires more time.
  • Adding bacon just before serving prevents it from becoming soggy.
  • You can adjust the jalapeño quantity to control the heat level.
  • This salad can be made a few hours in advance and refrigerated covered.
  • Prep Time: 15 minutes
  • Cook Time: Variable (5 minutes for canned, 10 minutes for frozen corn thawing, 45 minutes for charring fresh corn, plus bacon frying time about 15 minutes)
