Description

These Cookie Bat Cupcakes are a fun and creative treat that combines moist chocolate cupcakes with decorated peanut butter cups to resemble bats, perfect for Halloween parties or themed events. Using store-bought cookies and candies, these cupcakes are easy to assemble and visually impressive.

Ingredients

Chocolate Cupcakes

  • 1 batch chocolate cupcakes, baked and cooled (store-bought or homemade)

Vanilla Buttercream

  • 1 batch vanilla buttercream frosting, prepared
  • Gel food coloring (various colors to tint frosting as desired)

Bat Decoration Components

  • Chocolate peanut butter cup minis (e.g., Reese’s Minis) – enough for 24 cupcakes
  • Chocolate sandwich cookie thins (e.g., Oreo Thin Crisps) – about 12 cookies
  • Royal icing – enough to glue wings and eyes
  • Candy eyeballs – 24 pieces
  • Toothpicks – 24 pieces

Instructions

  1. Bake Cupcakes: Bake the chocolate cupcakes according to your chosen recipe or package instructions. Once done, allow them to cool completely before decorating to ensure the frosting and decorations adhere properly.
  2. Prepare Buttercream: While cupcakes bake and cool, prepare a batch of vanilla buttercream frosting. Use gel food coloring to tint the frosting in your desired colors for decoration.
  3. Assemble Bat Bodies: Take the chocolate peanut butter cup minis and gently skewer each one with a toothpick. These will become the bodies of the bats.
  4. Prepare Bat Wings: Twist apart the chocolate sandwich cookie thins, carefully scraping off and discarding the cream filling. Cut each cookie thin in half to create two wings.
  5. Attach Wings and Eyes: Using royal icing as glue, attach the halved cookie wings to either side of the peanut butter cup bodies to form bat wings. Then, adhere candy eyeballs to the peanut butter cups to complete the bat faces.
  6. Decorate Cupcakes: Spread or pipe the colored buttercream onto each cooled chocolate cupcake. Finally, insert the decorated bat skewer into the top of each cupcake, securing the playful bat decoration in place.

Notes

  • Store-bought cupcakes can be used to save time.
  • Royal icing acts as a sturdy edible glue; ensure it is fully dry before handling the bats extensively.
  • Customization tips: Use different colored frosting to create a spooky or festive look.
  • For a peanut allergy, substitute chocolate peanut butter cups with plain chocolate mini candies.
  • Handle cookie wings gently to prevent breaking.
