Liquid & Sauces
- 1 can (13.5 oz) coconut milk
- 1 tbsp soy sauce or tamari
- 1 tsp lime juice
Vegetables & Aromatics
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- fresh cilantro or green onions for garnish
Carbohydrate
- 2 cups cooked rice (jasmine, basmati, brown, or cauliflower rice)
Oils & Seasonings
- 1 tbsp vegetable oil or coconut oil
- salt and pepper to taste
Instructions
- Heat oil: Warm 1 tablespoon of vegetable or coconut oil in a large skillet over medium heat to prepare for cooking the chicken.
- Cook chicken: Add the diced boneless, skinless chicken breasts to the skillet, seasoning them with salt and pepper. Cook for 5-7 minutes, stirring occasionally, until the chicken is golden brown and reaches an internal temperature of 165°F.
- Add aromatics: Stir in the minced garlic and grated ginger, cooking for about 1 minute until fragrant to build flavor.
- Simmer with coconut milk: Pour the coconut milk into the skillet along with soy sauce and lime juice. Stir to combine and simmer the mixture for 5-7 minutes, allowing the sauce to thicken and flavors to meld.
- Prepare rice: While the chicken simmers, cook 2 cups of rice according to package instructions or use pre-cooked rice for convenience.
- Serve: Spoon the creamy coconut chicken over the cooked rice and garnish with chopped fresh cilantro or sliced green onions for a fresh finish.
