Ingredients
Mango Crème Anglaise
- 1.5 g gelatin sheets
- 100 g ready-made mango puree
- 4 whole eggs
- 90 g sugar
- 90 g unsalted butter
Chocolate Financier
- 250 g unsalted butter
- 20 g dark chocolate
- 250 g icing sugar
- 20 g cocoa powder
- 125 g ground almonds
- 85 g wheat flour
- 8 egg whites
- 25 g bitter orange marmalade
Rum Syrup
- 180 ml water
- 170 g sugar
- 150 ml dark rum
- 1/2 vanilla pod
Instructions
- Prepare the Mango Crème Anglaise: Hydrate the gelatin sheets in cold water until soft. In a saucepan, bring the mango puree to a boil. Meanwhile, whisk the eggs with sugar in a bowl until combined, then add half of the hot mango puree gradually, whisking continuously to temper the eggs. Strain this mixture into the saucepan with the remaining mango puree and cook over low heat, stirring continuously for about 4 minutes until slightly thickened. Remove from heat, stir in unsalted butter until melted and incorporated, and dissolve the drained gelatin sheets in the warm mixture. Pour the custard into dome-shaped molds (about 4.5 cm in diameter) and chill in the refrigerator until set.
- Make the Chocolate Financier Batter: Preheat the oven to 180°C (350°F). In a saucepan, melt the unsalted butter over medium heat, cooking for approximately 10 minutes until it develops a hazelnut brown color, then set aside to cool. Melt the dark chocolate gently using a double boiler until it reaches about 45°C. In a mixing bowl, sift together the wheat flour, icing sugar, cocoa powder, and ground almonds. Gradually fold in the well-whipped egg whites until blended. Add the melted chocolate and hazelnut butter into the mixture, stirring until smooth and homogeneous. Finally, mix in the bitter orange marmalade. Cover and chill the batter in the refrigerator for 20 minutes.
- Bake the Financiers: Transfer the batter to a piping bag fitted with a small opening. Pipe the mixture evenly into 15 financier molds. Bake in the preheated oven for 15 to 20 minutes, or until the edges are set and a toothpick inserted comes out clean. Remove the financiers from the oven and allow them to cool slightly before unmolding.
- Prepare the Rum Syrup: In a saucepan, combine the water, sugar, and the split vanilla pod. Bring to a boil and then remove from heat. Allow to cool. Once cooled, stir in the dark rum. Store the rum syrup in an airtight container in the refrigerator until needed.
- Assemble and Decorate: Trim the base of each financier slightly to even out. Lightly soak the base of each financier with the rum syrup. Carefully unmold the mango custard domes and gently place one on the center of each financier. Decorate with chocolate rings or other desired chocolate decorations. Serve chilled or at room temperature.
