Description

Delight in these luscious Chocolate Covered Cheesecake Strawberries, combining fresh strawberries dipped in rich semi-sweet chocolate and filled with a creamy, smooth cheesecake filling. Perfect for parties, desserts, or a sweet treat anytime, these individual treats are easy to make and irresistibly delicious.

Ingredients

Strawberries

  • 1 pound (about 12-15) large strawberries, thoroughly rinsed and patted dry

Chocolate Coating

  • 6 ounces (1 cup) semi-sweet chocolate chips

Cheesecake Filling

  • 4 ounces cream cheese, softened
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream, cold

Instructions

  1. Prepare baking sheet: Line a baking sheet with parchment paper and set it aside to use later for placing the chocolate-covered strawberries.
  2. Prepare strawberries: Rinse the strawberries thoroughly and carefully pat them dry with a paper towel. Remove the green tops and hull the centers using a small paring knife to create space for the cheesecake filling.
  3. Melt chocolate: Place the semi-sweet chocolate chips in a microwave-safe bowl. Heat in 30-second intervals, stirring between each session until the chocolate is fully melted and smooth.
  4. Dip strawberries: Dip each prepared strawberry into the melted chocolate, making sure they are well coated. Place each chocolate-dipped strawberry on the parchment-lined baking sheet to allow the chocolate to set.
  5. Prepare cheesecake filling: In a large mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use a hand mixer to blend the ingredients until smooth and creamy. Add the cold heavy cream and beat for an additional 2 minutes until the mixture is light and fluffy. Chill the cheesecake filling in the refrigerator for 15 minutes to firm it up.
  6. Fill strawberries: Transfer the chilled cheesecake filling into a piping bag fitted with a suitable tip. Pipe the filling carefully into the hollow center of each chocolate-coated strawberry.
  7. Set in refrigerator: If the cheesecake filling feels too soft after filling the strawberries, place them in the refrigerator for 10-15 minutes to fully set and firm up the filling.
  8. Serve: Serve the chocolate covered cheesecake strawberries immediately or within 12 hours to enjoy the best texture and flavor.

Notes

  • Ensure strawberries are completely dry before dipping to help the chocolate adhere properly.
  • Use a small paring knife to hull strawberries carefully without damaging their shape.
  • Microwave the chocolate chips in short intervals and stir frequently to avoid burning the chocolate.
  • Chilling the cheesecake filling before piping ensures better consistency and easier handling.
  • These treats are best enjoyed fresh within 12 hours but can be refrigerated up to 24 hours.
  • For a sweeter variation, use milk chocolate instead of semi-sweet chocolate chips.
