Description

Delicious and wholesome Chocolate Chip Banana Oatmeal Cookies made with ripe bananas, almond butter, maple syrup, rolled oats, and studded with chocolate chips and walnuts. These easy-to-make cookies are naturally sweetened and perfect for a healthy snack or dessert.

Ingredients

Wet Ingredients

  • 2 large ripe bananas, mashed (approx 3/4 cup mashed)
  • 1/2 cup almond butter (can substitute peanut butter)
  • 3 tbsp maple syrup
  • 1 tsp vanilla extract

Dry Ingredients

  • 2 cups rolled oats (use gluten-free if needed)
  • 1/4 tsp salt
  • 1/2 tsp cinnamon (optional)
  • 1/4 cup chocolate chips
  • 1/3 cup chopped walnuts

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix Wet Ingredients: In a mixing bowl, combine the mashed bananas, almond butter, maple syrup, and vanilla extract until smooth and well blended.
  3. Mix Dry Ingredients: In a separate bowl, stir together the oats, salt, cinnamon (if using), chocolate chips, and chopped walnuts to evenly distribute all ingredients.
  4. Combine Mixtures: Add the wet ingredients to the dry ingredients and mix until fully combined, forming a sticky cookie dough.
  5. Shape Cookies: Use a cookie scoop to portion the dough onto the prepared baking sheet. Gently press each cookie down with your hands to slightly flatten them for even baking.
  6. Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the cookies turn golden brown around the edges.
  7. Cool and Serve: Remove from the oven and let the cookies cool on the baking sheet for several minutes before transferring them to a wire rack. Enjoy warm or at room temperature.

Notes

  • You can substitute peanut butter for almond butter if preferred.
  • For a gluten-free version, make sure to use gluten-free rolled oats.
  • If you want a nut-free cookie, omit the walnuts and consider adding sunflower seeds instead.
  • The cinnamon is optional but adds a nice warmth and flavor.
  • Store the cookies in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
