Description
Delicious and comforting chicken breasts cooked in a rich and creamy mushroom sauce, enhanced with white wine and aromatic garlic. Ready in just 30 minutes, this skillet-based dish is perfect for a quick yet elegant dinner for four.
Ingredients
Chicken
- 2 tablespoons unsalted butter
- 1 pound boneless, skinless chicken breasts, cut in half lengthwise
- Salt and pepper to taste
Sauce
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 12 ounces white mushrooms, sliced
- 1 tablespoon all-purpose flour
- ¼ cup white wine
- 1 ½ cups heavy cream
- 1 tablespoon fresh parsley, for garnish
Instructions
- Heat the Skillet: Add the butter to a large skillet and melt it over medium-high heat, prepping the pan for cooking the chicken.
- Cook the Chicken: Season the chicken breasts on both sides with salt and pepper. Place them into the hot skillet, cooking about 3 to 5 minutes per side or until the chicken is no longer pink inside, depending on thickness. Remove and transfer to a plate once cooked.
- Cook the Mushrooms: In the same skillet, add the chopped onion and minced garlic. Cook for a couple of minutes until the onion becomes translucent and tender. Stir in the sliced mushrooms, season generously with salt and pepper, and cook for about 5 minutes, stirring occasionally. Pour in the white wine and deglaze the pan by scraping up the browned bits on the skillet bottom for added flavor.
- Finish the Sauce: Sprinkle the flour over the cooked mushrooms and stir continuously for about a minute to eliminate the raw flour taste. Then, add the heavy cream and cook for an additional 3 minutes, stirring occasionally until the sauce thickens slightly. Adjust seasoning with salt and pepper as needed. Return the chicken breasts to the skillet and spoon the creamy mushroom sauce over them.
- Finish and Serve: Garnish the chicken with fresh parsley and serve the dish hot for a satisfying meal.
Notes
- For extra flavor, consider using fresh herbs like thyme or rosemary in the sauce.
- White wine can be substituted with chicken broth if preferred.
- Ensure chicken breasts are of even thickness for uniform cooking.
- Heavy cream can be replaced with half-and-half for a lighter sauce, but it will be less rich.
- Serve with mashed potatoes, rice, or crusty bread to soak up the creamy sauce.
